CCNA EE Course
I have a question. EE offers a course on the CCNA track for both tests. How up to date are they? I am thinking of changing my focus from server to networking.

Can we verify if the course is concurrent with CCNA's current requirements?

This is current to the existing test. That said, the last date to test on against this number is slotted to be in February 2020, test changes after this.
To back atlas_shuddered this is the most up to date course out there.
Here is some more information on the certification and exam https://www.cisco.com/c/en/us/training-events/training-certifications/exams/current-list/100-105-icnd1.html

Alright will it renew after? I have never done the CCNA and is it possible to learn from the course here? Or will it require hands on labs for me to setup?
Course Content is regularly updated. CCNA Course provides Classroom Training, E-Learning, Practice Exam, Study Groups and Self-Study and a Training library. This is all found right here https://www.cisco.com/c/en/us/training-events/training-certifications/exams/current-list/100-105-icnd1.html#~stickynav=2

Are you suggesting I use EE for the initial course then use https://www.cisco.com/c/en/us/training-events/training-certifications/exams/current-list/100-105-icnd1.html#~stickynav=2 ??
You are referencing Cisco Direct I am just trying to find out what the best route is.

That, is an answer that is completely situational. What you need to do changes based on what your experience level is, how powerful the mass between your ears are and what kind of timeframes you are working with. I know folks that have simply read through the exam guide and then I know folks that have done it all - and still not passed.

My experience is very limited.
